Apple Blondie Cupcakes

Apple blondie cupcakes are the perfect treat for the whole family! They are packed with apples, cinnamon, and nutmeg. And, they are bursting with flavor once they are baked to perfection. The blondie cupcakes are dense and slightly chewy. Above all, you’ll love how quick and easy these apple cupcakes are to make.

What is a Blondie?

Blondies are the same style of dessert as a brownie except it isn’t chocolate. Blondies have a very similar consistency to a brownie. However, they have more of a vanilla flavor and the white sugar is replaced with brown sugar.

You will bake this batter into cupcakes, similar to making brownie cupcakes. This creates a thick, chewy apple dessert.

What kind of apples are best?

Whenever you are making something like apple cupcakes or apple blondies, you need to make sure you are using baking apples. Some apples are better for baking than others. When you use apples that are not baking apples, they might not soften properly, or they might soften too much, resulting in mush. We are using Envy™ apples to create the perfect apple blondie cupcake. 

Can Apple Blondies be made in advance?

You can make the apple blondies in advance. Since these blondie cupcakes will last for about 5 days in the refrigerator, you can make them a few days before you actually need them. However, keep in mind that if you make them ahead, they will not last as long after you serve them.

You can also make the batter in advance and store it in the refrigerator before baking.

Freezing the baked apple blondie cupcakes is another option to make the apple cupcakes in advance. After the cupcakes cool, wrap them in plastic wrap and store them in the freezer. After that, they will last up to 3 months. To thaw, remove from the freezer and place them in the refrigerator overnight.

How to Store the Apple Blondie Cupcakes

You want to make sure to store apple blondie cupcakes in the refrigerator. Like other apple cupcakes, this recipe is made with fresh fruit. And when you bake with fresh fruit, it is always best to keep them in the refrigerator.

We like to use a cupcake holder to store these. It provides protection from the air as well as keeps them covered and clean. You can also keep the apple blondies on a plate and cover it with plastic.

Variations

Caramel and apples always go together perfectly. You can add caramel chips to these blondies to make them caramel apple flavored.

The apple blondies can also be prepared in an 8×8” square pan, coated generously with Challenge Butter. You will need to increase the cooking time by 3 to 5 minutes. Cool and cut into squares to serve.

  • 1 ¼ cup all-purpose flour
  • ½ tsp baking powder
  • 1 cup light brown sugar, packed
  • ½ tsp kosher salt
  • ¼ tsp nutmeg
  • ½ cup unsalted Challenge Butter, melted and cooled (1 stick)
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • 1 large egg, room temperature
  • 2 Envy™ Apples, peeled, cored, and diced ¼” size

How to Make Apple Blondie Cupcakes

Preheat the oven to 350F. Line a 12ct muffin pan with cupcake liners and set aside.

In a medium bowl, whisk together flour, baking powder, salt, cinnamon and nutmeg.

In a large bowl, whisk together Challenge Butter and brown sugar for 2 minutes or until well combined. Once combined, add Egg and Vanilla and whisk until incorporated.

Then, add the flour mixture into the large bowl of wet ingredients. Stir until just combined, being careful to not overmix.

Fold in the chopped Envy™ Apples.

Spoon the batter evenly into cupcake liners.

Next, bake for 18-22 minutes or until a toothpick inserted into the center of a cupcake comes out clean.

Lastly, cool and serve.
