How to Make Watermelon Elote Salad

There are two stars in this recipe: grilled watermelon and elote corn. Both are unique takes on typical summer fare that elevate this salad into something more than just the sum of its ingredients.

Fresh and refreshing Watermelon Elote Salad

Start by preparing your ears of corn. Elote-style corn is covered in butter and mayo before being cooked to a delightful golden brown. The key to this is frequent rotation. Make sure each side is cooking nicely without getting burned. Learn more about making elotes here!

Watermelon takes on a new flavor and texture when grilled. Cooking down the juices makes it even sweeter than plain watermelon. The grill marks and taste give it just a hint of savory flavor. Grilled watermelon alone is a treat, but it becomes incredible alongside the complementary flavors in this Watermelon Elote Salad!

Watermelon Elote Salad

Ingredients 

  • 6 ears corn
  • 4 cups watermelon slices then grilled and cubed
  • 1/4 cup radishes finely diced
  • 1/4 cup green onions roughly chopped, light and dark green parts only
  • 1 tbsp lime juice
  • 1 jalapeño seeded and finely chopped
  • 2 tbsp butter
  • 1/4 tsp freshly ground pepper
  • 1/2 tsp salt
  • 1/3 cup cilantro roughly chopped
  • 1/2 cup Cotija cheese crumbled
  • 1/4 tsp chili powder
  • 1/3 cup chipotle mayo

Instructions 

  • On a grill or in a grill pan, prepare the corn elote-style: Coat corn cobs with butter and mayo and grill. Rotate frequently and cook until all sides are golden brown. Remove from grill plan. Remove corn kernels from cob. 
  • When the grill is hot, add the watermelon slices in a single layer and grill until warmed through and grill marks appear, 2 to 3 minutes per side.
  • Toss the corn kernels and watermelon with the rest of the veggies in a large bowl.
  • Mix in chipotle mayo, chilli powder and lime juice.
  • Top with cojita cheese and serve.
