Celebrating National Celery Month With The “It” Ingredient

Today on Indy Style, I shared several suggestions on how to enjoy this “it” veggie. I also shared a few recipes to help you get into the St. Patrick’s Day spirit!

Celery Rice Bowls

If you like peanut butter and celery, you’ll love Celery Rice Bowls with Thai Peanut Butter Dressing.

Celery Rice Bowls

Ingredients

Bowl

  • Brown rice
  • Celery
  • Shredded red cabbage
  • Bell peppers
  • Cilantro

Dressing

  • 1/3 cup Peanut butter
  • 1 tsp Toasted sesame oil
  • 2 cloves Garlic
  • 3 Tbsp Tamari
  • Juice of 1 lime

Directions

  1. Cook brown rice according to package instructions.
  2. Combine celery, red cabbage, bell pepper, cilantro in a bowl. Set aside.
  3. Prepare peanut sauce by combining all ingredients and stirring until smooth. Set aside.
  4. Make bowls. Begin with a layer of brown rice and then add vegetables. Top with peanut sauce.

This is the world’s easiest salad! Celery, parmesan cheese, toasted walnuts and dressing is all it takes!

    • Celery, chopped
    • Parmesan cheese
    • Toasted walnuts

Dressing

  • Olive oil
  • Lemon zest
  • Lemon juice

Directions

  1. Toss salad ingredients with dressing and serve.

Ingredients

  • Celery juice
  • Lime juice (optional)
  • White tequila
  • Dash of simple syrup

Directions

  1. Mix together celery juice, tequila, lime juice, and simple syrup.
