Fast and Easy Potato Recipes on Indy Style

Are you bored with your usual potato recipes? You don’t have to be! Earlier today on Indy Style, I showed how versatile potatoes can be with four fast and easy potato recipes.

Besides being tasty, potatoes also are a superfood. That means they’re packed full of nutrients and are especially healthy. Take a peek at these healthier ways to prepare potatoes.

 

Sweet Potato Toast from The Produce MomHave you seen this all over Pinterest? It’s sweet potato toast. Yes, you simply slice sweet potatoes into thick pieces and drop them in a regular toaster. That’s it! You may need to use four or five cycles of the toaster to get the sweet potatoes soft and tender. But it will be worth the wait!

After toasting the sweet potatoes, it’s all about the toppings. My favorite combinations are avocado slices, Buffalo chicken spread, and butter with cinnamon-sugar. Try them all because they’re really delicious!

Baked Potato Chips from The Produce MomHomemade potato chips are so fun to make! But skip the fried version and go for these baked ones instead.

Step 1 – Preheat the oven to 400 degrees.
Step 2 – Prepare Microwave in Bag® Potatoes from Wada Farms according to the package directions. If you don’t have these, roast or steam your favorite potatoes.
Step 3 – Place the cooked potatoes on a cooking sheet and spray them with cooking spray. Smash them with the bottom of a mason jar.
Step 4 – Add your favorite seasonings and top with Parmesan cheese.
Step 5 – Bake the potatoes for 20 minutes or until they are crispy.

Sweet Potato Crust PizzaThis next recipe is great if you eat a gluten-free diet – Sweet Potato Crust Pizza.

Step 1 – Preheat the oven to 400 degrees. Add chopped skin-on sweet potatoes and rolled oats to a food processor. Process them for a few minutes.
Step 2 – Add at least one egg. Process until the ingredients are combined.
Step 3 – Spray cooking spray on a pizza pan, a cast iron skillet, or a casserole dish. Spread the sweet potato mixture on the cooking dish. Press the mixture with your fingers.
Step 4 – Bake the crust for 20 to 25 minutes.
Step 5 – Top the crust with your favorite pizza toppings. We used alfredo sauce, spinach, and cheese. Bake the loaded pizza for 15 minutes. Enjoy!

 

Fall is coming, and that means soup season! On the first cool day of fall, warm up with this simple Potato Soup in a Blender.

Step 1 – Prepare Microwave in Bag® Potatoes from Wada Farms according to the package directions. If you don’t have these, roast or steam your favorite potatoes.
Step 2 – Put the cooked potatoes in a blender. Add low-fat milk.
Step 3 – Blend until the ingredients are smooth and combined.
Step 4 – Pour the soup into a serving bowl and top with your favorite potato toppings, like bacon, cheese, sour cream, and chives!
