Slow Cooking Sweet Potato and Roast Beef

Chuck roast and beef broth provide a meaty flavor to this dish, but it’s the veggies that really make it shine. Sweet potatoes and mushrooms add to its heartiness and bring balance to its beefy flavor.

Sweet onions and chopped celery give it a satisfying crunch and soak up the rosemary, Worcestershire, and broth flavors so every bite is juicy and delightful.

After browning the meat, let this dish cook all day. It benefits from a long cook time (we recommend 10 hours), so you can leave it all day and come home to a ready-made meal.

Sweet Potato & Roast Beef Slow Cooker Meal

Ingredients 

  • 2 ½ lbs chuck roast
  • 1 ½ cups beef broth
  • 2 medium Wada Farms sweet potatoes cubed
  • 12 oz bella mushrooms
  • 4 celery stalks chopped
  • 1 medium sweet onion chopped
  • 1 tbsp rosemary
  • 2 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • Salt & pepper to taste

Instructions 

  • Spray slow cooker with cooking spray. Place sweet potatoes, celery, onions, and mushrooms in the bottom of the slow cooker.
  • Season the chuck roast with salt and pepper. Heat olive oil in a pan over medium heat. Brown roast on all sides, about 30 seconds per side. Place on top of the veggies.
  • Mix together beef broth, rosemary, and Worcestershire in a small bowl. Pour the mixture over the top of the beef and veggies.
  • Cook on low for 10 hours.
  • Remove the lid and shred beef and mix well. Serve immediately and enjoy!
