If you love Stuffed Bell Peppers, you’re going to love this casserole! It’s all the delicious flavors of traditional stuffed peppers but made simple. It’s also more kid-friendly. If you have a child who eats the stuffing and then leaves the bell pepper on the plate, this casserole is a great solution. The bell peppers are chopped and mixed right into the dish and then covered with cheese, making kids more likely to give them a try.

Stuffed Bell Pepper Casserole comes together quickly. The ingredients are cooked in one pot on the stove top and then baked in a casserole dish. This meal can also be made ahead and frozen โ€” a great dinner solution for busy weeknights! Thaw the casserole overnight in the refrigerator and pop it in the oven the next evening andย voilร , dinner is served!

We chose to make our Stuffed Bell Pepper Casserole with different colored bell peppers, because who doesn’t love a colorful meal? Kids certainly appreciate the rainbow color effect. However, you can use all the same color or only two colors โ€” whatever you have on hand or prefer is fine!

Stuffed Pepper Casserole

Ingredients 

  • 2 tbsp butter
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1 green bell pepper chopped
  • 1 orange bell pepper chopped
  • 1 large onion chopped
  • 2 cloves garlic chopped
  • 1 lb ground beef
  • 1 taco seasoning packet
  • 1 can black beans
  • 1 can fire roasted diced tomatoes
  • 1 cup brown rice
  • 2 tsp Worcestershire sauce
  • 15 oz tomato sauce
  • 1 1/2 cups vegetable broth
  • 2 cups cheddar cheese shredded

Instructions 

  • Preheat oven to 350 degrees F.
  • Melt butter in a large pot over medium heat. Stir in all bell peppers, onion, and garlic until everything is slightly soft (approximately 2 minutes). Stir in ground beef and cook until it is browned, stirring often. Drain grease. Season with taco seasoning packet.
  • Mix diced tomatoes, rice, Worcestershire sauce, black beans, tomato sauce, and broth into beef/bell pepper mixture and bring to a simmer. Cook until rice is tender, about 20 minutes, stirring occasionally. Pour mixture into a large casserole dish. Top with cheddar cheese.
  • Bake in oven until casserole is heated through, about 45 minutes.
