One of our favorite things about this Spiral Sweet Potato Bake recipe is that it’s all made in one dish. That means less cleanup! We think that is something we can all get on board with! However, the rings of the sweet potato are simply gorgeous and can be easily achieved with a mandolin.

Are Sweet Potatoes Healthy?

Sweet Potatoes are a nutritious and heathy carb that can be enjoyed year round. They are packed full of vitamins, minerals, fiber and antioxidants.

Sweet Potatoes start to become unhealthy by adding additional ingredients such as butters and sugars to achieve an unnecessary, sweet flavor. This Sweet Potato Bake is more savory. We don’t use anything but a little butter and olive oil for the dressing.

Can you eat the skin of a sweet potato?

Just like any potato, the skins are safe to eat. Sweet potatoes are great for a healthy gut, feeling full and help to prevent chronic disease.

Ingredients Needed to Make a Spiral Sweet Potato Bake

  • Wada Farms sweet potatoes (I used 6 for this recipe to fill a 12″ cast iron skillet)
  • butter
  • garlic
  • olive oil
  • kosher salt
  • black pepper
  • rosemary

How to Make A Sweet Potato Bake

Start by preheating your oven to 350°.

Next, using a mandolin, slice the sweet potatoes. We started by slicing 4 sweet potatoes and ended up slicing two more to fill the 12″ cast iron skillet. Depending on the size of the sweet potatoes and skillet, you may need more or less.

Whisking the butter dressing

Once the sweet potatoes have been sliced, set them aside and make the dressing. Place melted butter, olive oil, rosemary, salt and pepper in a bowl. Then, whisk until incorporated.

Sweet potato rings in an iron skillet

Place the slices of sweet potatoes into a ring in your oven-safe skillet or dish. If you have leftover sweet potato slices, you can create a smaller ring to fill the skillet.

Sweet Potatoes with the butter dressing drizzled on top

Pour the dressing over the sweet potatoes, and bake covered for 30 minutes until the sweet potatoes are tender.

Uncover the sweet potatoes and brush with a tablespoon or two more of olive oil. Bake uncovered for an additional 15-20 minutes.

Spiral Sweet Potato Bake

Ingredients 

  • 4-6 sweet potatoes I used 6 for this recipe to fill a 12″ cast iron skillet
  • 3 tbsp unsalted butter melted
  • 2 garlic cloves minced
  • 3 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1-2 tbsp rosemary chopped

Instructions 

  • Start by preheating your oven to 350°.
  • Next, using a mandolin slice the sweet potatoes. We started by slicing 4 sweet potatoes and ended up slicing two more to fill the 12″ cast iron skillet. Depending on the size of the sweet potatoes and skillet, you may need more or less.
