Sheet Pan Baked Feta With Greek Veggies

This easy, vegetarian sheet pan meal combines creamy, baked feta with roasted broccoli, grape tomatoes, red onions, lemon, olives, garlic, and oregano for a Greek-inspired delicacy.

Serve the sheet pan ingredients on top of orzo rice, fusilli pasta, brown rice, or farro to complete the meal. If you’re following a gluten-free diet, opt for rice or gluten-free pasta.

Ingredients
- 1 small bunch broccoli cut into florets
- 1 orange bell pepper sliced into rounds
- 1/2 red onion sliced thinly
- 1/4 cup kalamata olives
- 4 cloves garlic cut in half
- 1/2 cup grape tomatoes
- 1 lemon sliced thinly
- 6 oz feta cheese cut into squares
- 1 tbsp olive oil
- salt and pepper
- 1 tbsp fresh oregeno
Instructions
- Preheat the oven to 425 degrees. Line a baking sheet with a silicone mat or parchment paper.
- Add broccoli, bell pepper, red onion, olives, garlic, tomatoes, lemon, and feta cheese to the baking sheet. Drizzle with olive oil. Season with salt and pepper.
- Roast in the oven for 20-25 minutes. Toss the vegetables, not the cheese, halfway through roasting.
- Remove from oven and sprinkle with fresh oregano. Serve over orzo rice, fusilli pasta, brown rice, or farro (optional).
