Sheet Pan Smoky Lime Chicken Fajitas

Ingredients 

  • 2 lbs boneless, skinless chicken breasts cut into 1 inch strips
  • 1 red bell pepper cut into strips
  • 1 orange bell pepper cut into strips
  • 2 Peri & Sons Farms Nevada Whites™ sliced
  • 1 lime (juice only)
  • 1 tbsp corn starch
  • 2 tsp chili powder
  • 1 tsp salt
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1 tsp corriander
  • 1/4 tsp chipotle chili powder
  • limes to garnish cut into wedges

Instructions 

  • Preheat oven to 400 degrees.
  • Combine all spices in a large mixing bowl. Add bell peppers, white onions, lime juice, and chicken. Toss until evenly coated.
  • Place chicken and veggies onto a baking sheet and bake for 18-25 minutes, or until chicken is cooked through. Remove from oven and garnish with lime wedges.
  • Serve with warm tortillas and pico de gallo.

Notes

*Serve with pico de gallo and tortillas. Choose corn tortillas to keep this meal gluten-free.
