Step 1:
Begin by prepping the produce you want to use. Wash, peel, core, and slice each produce item as you typically would, depending on the item.
Step 2:
Place prepped produce into a large mixing bowl. Drizzle with olive oil, sprinkle with salt and pepper, then mix.
Step 3:
Spread the theย produce mixture evenly onto a baking sheet lined with parchment paper. Lay a few sprigs of fresh thyme on top.
Step 4:
Roast in the oven at 400 degrees for 15-20 minutes, or until it is fork-tender and juices are starting to release. Divide produce evenly into bowls and serve.
