How To Roast Fruits and Vegetables in the Oven
Begin by prepping the produce you want to use. Wash, peel, core, and slice each produce item as you typically would, depending on the item.
Place prepped produce into a large mixing bowl. Drizzle with olive oil, sprinkle with salt and pepper, then mix.
Spread the the produce mixture evenly onto a baking sheet lined with parchment paper. Lay a few sprigs of fresh thyme on top.
Roast in the oven at 400 degrees for 15-20 minutes, or until it is fork-tender and juices are starting to release. Divide produce evenly into bowls and serve.
