Crockpot Celery Bean Soup
Ingredients
- 6 Dandyยฎ Celery Sticks chopped
- 2 cloves garlic chopped
- 1 lemon squeezed
- 1/2 cup parsley fresh leaves
- 1 yellow onion chopped
- 5 cups chicken broth
- 3 15oz cans cannellini beans drained
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/4 tsp smoked paprika
- 1/2 tsp salt
- 1 tsp dried oregano
- 1 bay leaf
- 1/2 tsp ground cumin
- 2 tbsp extra virgin olive oil
Instructions
- In your Crockpot, add all the ingredients except for the parsley and set on low for 4 hours or high for 2 hours.
- When serving, top each bowl with parsley and another drizzle of extra virgin olive oil. Serve with your favorite rustic bread.
