Crockpot Celery Bean Soup is hearty and nourishing — exactly what we all crave as the temperatures drop and the nights get longer. A steaming hot bowl of soup on a chilly fall night is so comforting. What’s more is that you don’t have to slave away in the kitchen all day to prepare this meal. This flavorful soup takes just 10 minutes of prep before it gets tossed into a Crockpot. Your home will be filled with the scent of aromatics and spices as this soup cooks — piquing everyone’s appetite for dinner.

Crockpot Celery Bean Soup
Ingredients
- 6 Dandy® Celery Sticks chopped
- 2 cloves garlic chopped
- 1 lemon squeezed
- 1/2 cup parsley fresh leaves
- 1 yellow onion chopped
- 5 cups chicken broth
- 3 15oz cans cannellini beans drained
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/4 tsp smoked paprika
- 1/2 tsp salt
- 1 tsp dried oregano
- 1 bay leaf
- 1/2 tsp ground cumin
- 2 tbsp extra virgin olive oil
Instructions
- In your Crockpot, add all the ingredients except for the parsley and set on low for 4 hours or high for 2 hours.
- When serving, top each bowl with parsley and another drizzle of extra virgin olive oil. Serve with your favorite rustic bread.
