If you are a baseball mom, you know the struggle of getting dinner on the table on practice nights and game days. It’s not unusual to spend several hours an evening or an entire Saturday at the baseball diamond. Sometimes, it just seems easier to grab a quick bite at the concession stand than to prepare a meal at home. But feeding a family at the concession stand gets costly. And even more frustrating are the limited, if any, choices that include fruits and veggies.
We understand the struggle! We are baseball moms just like you. We taxi our kids back and forth to practice, run from diamond to diamond to cheer on each child, and go home to scrub grass stains from uniforms. It was on one of those exhausting evenings that we first thought, there has to be a better way! A better way to feed our families than with concession stand junk that doesn’t take a ton of time or energy.
That’s how we came to develop this recipe for Celery and Apple Pasta Salad with Light Caesar Dressing. It only takes 20 minutes to prepare, it’s full of fresh produce, and it’s loved by adults and children alike! The apples, celery, and walnuts give this salad plenty of crunch. The homemade dressing is light and creamy. Make this pasta salad the night before or morning of a busy day. It packs up easily in a cooler so you can take it to the ballpark with you on those days when it’s just impossible to sit down at the dinner table.
Here’s what you’ll need to make Celery and Apple Pasta Salad with Light Caesar Dressing:

How to make Celery And Apple Pasta Salad With Light Caesar Dressing:
Start by cooking the penne pasta according to the directions on the package. While the pasta is cooking, prep your other ingredients. Save time by buying walnuts that are already chopped and Dandy® Celery Sticks that are already washed and ready to eat.
Once your salad ingredients are prepped and your dressing made, stir to combine in a large bowl. When you’re ready to serve, place the salad on a bed of fresh sweet baby lettuce blend and garnish with parsley.
As you’re packing up the Celery and Apple Pasta Salad in your cooler, be sure to throw in the remaining Dandy® Celery Sticks for an extra treat to enjoy in the stands. We love Dandy® Celery because it’s naturally sweeter and crispier than other celery and it has less strings! And of course we love their new baseball-themed packaging! Dandy® Celery grows on family farms right here in the United States. An All-American snack for America’s favorite pastime!
