Small Change, Big Impact!

Caprese salad is a classic Italian dish made with tomatoes, mozzarella cheese, and basil. We kept that traditional base and simply added tender slices of grilled zucchini. This small change makes a big impact!

The grilled zucchini pairs perfectly with slices of juicy tomatoes, delicate mozzarella, and sweet basil. Olive oil, balsamic, and a pinch of black pepper and kosher salt bring all the flavors together. We opted for a balsamic glaze, but balsamic vinaigrette is an excellent choice too.

Grilled Zucchini Caprese Salad

Ingredients 

  • 2 zucchini
  • 2 small beefsteak tomato (or any red slicer tomato variety) sliced
  • 8 oz fresh mozzarella cheese sliced
  • basil to taste
  • black pepper to taste
  • kosher salt to taste
  • balsamic glaze to taste
  • olive oil to taste

Instructions 

  • Cut zucchini into half-inch rounds. Toss with olive oil, salt and pepper. Place on a pre-heated grill at medium-high heat. Grill for approximately 5 minutes on both sides, until grill marks form. Remove from grill.
  • Arrange tomatoes, mozzarella, and basil leaves on a platter. Add grilled zucchini on top. Drizzle with olive oil, balsamic glaze, and additional salt and pepper.

Notes

Balsamic vinaigrette can be substituted for the balsamic glaze.
