Sheet Pan Baked Feta

Easy sheet pan meal combines creamy, baked feta with roasted broccoli, grape tomatoes, red onions, lemon, olives, garlic, and oregano for a Greek-inspired delicacy.

Ingredients 

  • 1 small bunch broccoli cut into florets
  • 1 orange bell pepper sliced into rounds
  • 1/2 red onion sliced thinly
  • 1/4 cup kalamata olives
  • 4 cloves garlic cut in half
  • 1/2 cup grape tomatoes
  • 1 lemon sliced thinly
  • 6 oz feta cheese cut into squares
  • 1 tbsp olive oil
  • salt and pepper
  • 1 tbsp fresh oregeno

Instructions 

  • Preheat the oven to 425 degrees. Line a baking sheet with a silicone mat or parchment paper.
  • Add broccoli, bell pepper, red onion, olives, garlic, tomatoes, lemon, and feta cheese to the baking sheet. Drizzle with olive oil. Season with salt and pepper.
  • Roast in the oven for 20-25 minutes. Toss the vegetables, not the cheese, halfway through roasting.
  • Remove from oven and sprinkle with fresh oregano. Serve over orzo rice, fusilli pasta, brown rice, or farro (optional).
