How To Make Veggie Tofu Bowls With Peanut Sauce

Begin by cooking your rice according to the instructions on the package. While the rice is cooking, prepare the tofu for the oven. Wrap the tofu in a paper towel and set it on a plate. Set another plate on top and place something heavy on it (a heavy bottom pot or skillet works well). Let it sit like this for 10-30 minutes to remove the moisture.

Produce Moms Tip: If your family eats a lot of rice, make a large batch of it at the beginning of the week and store it in the refrigerator. Take out what you need for each meal and heat in the microwave. This meal-prep tip cuts down on cooking time.

Once your tofu has drained, cut it into cubes. Place those cubes on a baking sheet and drizzle with tamari and olive oil and sprinkle with cornstarch. Toss to evenly coat each piece. Bake the tofu in the oven at 400 degrees for 30 minutes. Turn the tofu pieces over once midway through baking.

While your tofu is in the oven, prepare your veggies. Combine red cabbage, carrots, bell pepper, cilantro and lime juice in a bowl. Set it aside and make your peanut sauce.

To make the peanut sauce, simply mix together peanut butter, toasted sesame oil, garlic, tamari, and lime juice.

Now that all of the components of your bowl are ready, start building! Begin with a bed of rice and then add the veggies and tofu. Top with peanut sauce and chopped peanuts. Garnish with a lime wedge and enjoy!

Ingredients 

Veggie Tofu Bowl

  • 2 cups brown rice
  • 14 oz extra firm tofu pressed and cut into cubes
  • 1 tbsp tamari
  • 2 tsp olive oil
  • 2 tsp cornstarch
  • 1/2 cup red cabbage shredded
  • 1/2 cup Carrots shredded
  • 1/4 cup red bell pepper diced
  • 1/4 cup cilantro chopped
  • 1 lime (juice only)
  • 1/4 cup peanuts

Peanut Sauce

  • 1/3 cup peanut butter
  • 1 tsp toasted sesame oil
  • 2 cloves garlic minced
  • 3 tbsp tamari
  • 1 lime (juice only)

Instructions 

  • Cook brown rice according to package instructions.
  • Place tofu pieces on baking sheet and drizzle with tamari and olive oil. Sprinkle cornstarch and toss to evenly coat each piece. Bake at 400 degrees for 30 minutes, turning once midway.
  • Combine red cabbage, carrots, bell pepper, cilantro and lime juice in a bowl. Set aside.
  • Prepare peanut sauce by combining all ingredients and stirring until smooth. Set aside.
  • Make bowls. Begin with a layer of brown rice, add tofu and veggies and top with peanut sauce. Sprinkle with chopped peanuts and garnish with a lime wedge.
