Cook brown rice according to package instructions.
Place tofu pieces on baking sheet and drizzle with tamari and olive oil. Sprinkle cornstarch and toss to evenly coat each piece. Bake at 400 degrees for 30 minutes, turning once midway.
Combine red cabbage, carrots, bell pepper, cilantro and lime juice in a bowl. Set aside.
Prepare peanut sauce by combining all ingredients and stirring until smooth. Set aside.
Make bowls. Begin with a layer of brown rice, add tofu and veggies and top with peanut sauce. Sprinkle with chopped peanuts and garnish with a lime wedge.
