Watermelon And Goat Cheese Salad

May is National Salad Month! This Watermelon & Goat Cheese Salad from Garden Cut is one of my very favorites! Don’t overlook fresh fruit as an ingredient option when you are preparing salads. Watermelon is a great addition to salad, plus it always makes me think about warm weather, plus… who doesn’t like watermelon?!?? Seriously! It’s a favorite to many. This is pretty much the perfect salad & always well-received when I serve it to a crowd. Easy to make, affordable & oh-so-delicious!
Watermelon & Goat Cheese Salad
Ingredients
- 12 oz watermelon cubed
- 1 small red onion sliced thin
- 5 oz arugula baby variety
- 12 oz goat cheese crumbled
- 2 tbsp white balsamic vinegar
- 1/4 cup olive oil extra virgin
- salt and pepper to taste
- 1-1/2 cups balsamic vinegar
Instructions
- In a small saucepan, bring the balsamic vinegar to a boil over medium heat. Reduce heat to low 7 simmer, about 10 minutes, until reduced to a syrup consistency. Set aside & allow the balsamic glaze to cool.
- In a medium bowl, combine the baby arugula & red onion. Pour the white balsamic vinegar & extra-virgin olive oil over the arugula mix & toss gently until coated well. Season with salt & pepper. Arrange watermelon chunks & goat cheese on top of dressed arugula & drizzle with balsamic glaze. Serve immediately.
