Thai Peanut Chicken and Sweet Potato Noodles

Stir fries are a great way to get more veggies into your family’s diet. This stir fry is particularly awesome because the noodles are made from one of our very favorite vegetables, sweet potatoes! Did you know sweet potatoes were named as one of the 10 best foods to eat regularly by The Center for Science in the Public Interest (CSPI)? That’s because they are nutritional powerhouses, loaded with carotenoids and a great source of potassium and fiber. Sweet potato noodles are a perfect solution for those following a gluten-free diet.

You will need a handheld spiralizer to make this dish.

If you have some extra veggies in the fridge that you need to use up, don’t be afraid to throw them in too! This dish would be delicious with broccoli, bell peppers, onions, or carrots. To make this meal vegetarian-friendly, substitute the chicken for tofu or mushrooms and replace the chicken broth with vegetable broth.

Thai Peanut Sauce Ingredients

  • 2 Tbsp peanut butter
  • 1/4 cup chicken broth
  • 2 Tbsp soy sauce
  • 2 tsp rice vinegar
  • 1 Tbsp chili garlic sauce
  • 2 tsp sesame oil
  • 1/2 tsp ginger ground
  • 2 cloves garlic minced

Recipe Ingredients

  • 2 Tbsp olive oil
  • 2 lbs chicken breast diced
  • 2 medium sweet potatoes peeled & spiralized
  • 2 cups baby bok choy
  • peanuts for garnish
  • green onion for garnish


  • Whisk together peanut sauce ingredients, set aside.
  • Peel sweet potatoes, spiralize and set aside.
  • Add olive oil to a large skillet over medium-high heat. Add diced chicken and saute until cooked through. Remove chicken from skillet and place in a bowl.
  • Turn heat down to medium, and add sweet potato noodles and baby bok choy to skillet. Simmer for 5 minutes or until noodles are al dente.
  • Return chicken to skillet and add peanut sauce. Toss until the noodles are well coated and everything is heated through.
  • Scoop into bowls and garnish.
