A salad kids actually love to eat!

Getting kids to eat salad isnโ€™t always easy. Thai-Lime Edamame & Rice Noodle Salad is a kid favorite because itโ€™s so fun to eat! What child doesnโ€™t love slurping up noodles? (weโ€™ll save table manners for another dayโ€ฆ)! Plus, given the chance to try it, nearly all kids LOVE edamame! Serve this salad as a main course or as an accompaniment to chicken or fish.

Thai-Lime Edamame & Rice Noodle Salad

Ingredients 

  • 8 oz dried rice noodles
  • 1 1/2 cup frozen shelled edamame thawed
  • 1/2 cup celery sliced
  • 1 tbsp sesame oil
  • 2 tbsp low sodium soy sauce or tamari
  • 1 tbsp lime juice
  • 1 1/2 tbsp brown rice syrup or agave nectar
  • 1 cup mung bean sprouts
  • 1/4 cup Green Onions chopped
  • 1/4 cup cilantro chopped

Instructions 

  • Cook rice noodles according to directions on package and set aside.
  • In a bowl, whisk together sesame oil, soy sauce, brown rice syrup, and lime juice to make a dressing.
  • Place edamame, rice noodles, celery, green onions, and cilantro in a bowl. Toss with dressing and serve immediately.
