A salad kids actually love to eat!

Getting kids to eat salad isn’t always easy. Thai-Lime Edamame & Rice Noodle Salad is a kid favorite because it’s so fun to eat! What child doesn’t love slurping up noodles? (we’ll save table manners for another day…)! Plus, given the chance to try it, nearly all kids LOVE edamame! Serve this salad as a main course or as an accompaniment to chicken or fish.

Ingredients

  • 8 oz dried rice noodles
  • 1 1/2 cup frozen shelled edamame thawed
  • 1/2 cup celery sliced
  • 1 tbsp sesame oil
  • 2 tbsp low sodium soy sauce or tamari
  • 1 tbsp lime juice
  • 1 1/2 tbsp brown rice syrup or agave nectar
  • 1 cup mung bean sprouts
  • 1/4 cup Green Onions chopped
  • 1/4 cup cilantro chopped

Instructions

  • Cook rice noodles according to directions on package and set aside.
  • In a bowl, whisk together sesame oil, soy sauce, brown rice syrup, and lime juice to make a dressing.
  • Place edamame, rice noodles, celery, green onions, and cilantro in a bowl. Toss with dressing and serve immediately.
