This salad is bursting with summer flavors, and because the noodles in this salad are made from zucchini, this is a great option for our gluten-free friends! You will need a spiralizer to make this recipe. A spiralizer is an inexpensive kitchen gadget that makes spiral noodle-like strands from vegetables and fruit.

Strawberry Shrimp Zucchini Noodle Bowls


Asian Dressing

  • 1-1/2 tbsp peanut oil
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce low sodium
  • 1 tsp sugar
  • 1/8 tsp pepper


  • 2 medium zucchini
  • 2 cups strawberries sliced
  • 2 cups baby spinach
  • 12 oz medium shrimp cooked, peeled, chilled
  • 2 tsp sesame seeds


  • In a small bowl, whisk together dressing ingredients. Set aside.
  • Using a Spiralizer®, make zucchini noodles.
  • Place all salad ingredients in a large bowl. Add dressing and toss.
