Ingredients

  • 2 medium yams (about 3 cups of cubes)
  • 1 tsp olive oil
  • 1 tbsp sugar
  • 1/2 tsp cinnamon
  • 3 seconds cooking oil spray
  • 2 tsp sugar

Instructions

  • Pre-heat oven to 350°F.
  • Peel and cut 2 medium yams into 1 inch squares. Drizzle yams with 1 teaspoon olive oil.
  • Combine 1 tablespoon sugar and cinnamon stir in potatoes until evenly coated.
  • Spray flat, shallow baking pan with cooking oil. Place potatoes on pan, sprinkle with 2 teaspoons sugar and bake for 40 minutes turning potatoes twice.
