Splendidly Roasted Yams
Ingredients
- 2 medium yams (about 3 cups of cubes)
- 1 tsp olive oil
- 1 tbsp sugar
- 1/2 tsp cinnamon
- 3 seconds cooking oil spray
- 2 tsp sugar
Instructions
- Pre-heat oven to 350°F.
- Peel and cut 2 medium yams into 1 inch squares. Drizzle yams with 1 teaspoon olive oil.
- Combine 1 tablespoon sugar and cinnamon stir in potatoes until evenly coated.
- Spray flat, shallow baking pan with cooking oil. Place potatoes on pan, sprinkle with 2 teaspoons sugar and bake for 40 minutes turning potatoes twice.
