Raspberry Vinaigrette

Raspberries are delicious on their own, but also work extremely well when blended into a vinaigrette salad dressing! A fruit-flavored salad dressing can turn any normal salad into an incredibly delightful meal. ย One cup of raspberries is only 52 calories, offers 7 grams of fiber (more than a bran muffin!), and is rich in vitamin C and antioxidants.

Raspberry Vinaigrette
Ingredients
- 1 pint raspberries
- 2 cloves garlic peeled & minced
- 1 shallot peeled & minced
- 1/4 cup white balsamic vinegar
- 3/4 cup olive oil extra virgin
- salt and pepper to taste
Instructions
- Put the raspberries and white balsamic vinegar in a blender and puree until smooth.
- Pour into a bowl and whisk in the garlic and shallots.
- Slowly drizzle in the extra virgin olive oil, whisking constantly.
- Season with salt and pepper.
