Olives with Peppers is a delicious vegetarian, gluten-free dish that you can whip up in under 30 minutes. Serve it as an appetizer or as a side dish.

Olives with Peppers


  • 6 bell peppers
  • 1/4 cup olive oil
  • 4 tbsp capers
  • 4 tbsp green olives chopped
  • 1-1/2 tsp wine vinegar
  • 1 tsp sugar
  • 1/2 tsp oregano chopped
  • salt and pepper to taste


  • Cut peppers into 1/2 inch slices. Sauté in olive oil until soft.
  • Mix in the capers, green olives, wine vinegar, sugar, and oregano. Season with salt and pepper and simmer for 15 minutes.
  • Chill and serve as an appetizer or side dish.
