Olives with Peppers

Olives with Peppers is a delicious vegetarian, gluten-free dish that you can whip up in under 30 minutes. Serve it as an appetizer or as a side dish.
Olives with Peppers
Ingredients
- 6 bell peppers
- 1/4 cup olive oil
- 4 tbsp capers
- 4 tbsp green olives chopped
- 1-1/2 tsp wine vinegar
- 1 tsp sugar
- 1/2 tsp oregano chopped
- salt and pepper to taste
Instructions
- Cut peppers into 1/2 inch slices. Sautรฉ in olive oil until soft.
- Mix in the capers, green olives, wine vinegar, sugar, and oregano. Season with salt and pepper and simmer for 15 minutes.
- Chill and serve as an appetizer or side dish.
