Dinner does not get any easier than this Lemon Pepper Chicken & Summer Squash Sheet Pan recipe! 30 minutes from start to finish and six simple ingredients (some of which you likely already have in your kitchen) is all it takes. The end result is a flavorful meal that the whole family will enjoy.
Summer squash includes varieties such as zucchini, pattypan squash, yellow squash, and chayote squash. While all are delicious in their own right, for this recipe we are using green zucchini and yellow squash. Both have a light, mild flavor and their contrasting colors look appealing when used together.
Produce Moms Tip: Because of their mild flavor, thin skin, smooth texture, and bright colors, yellow squash and green zucchini are very kid-friendly. They can be cooked in a variety of ways, so introduce your kids to summer squash in different dishes and see which ones they like best!

Whipping up this dish is practically effortless! Simply combine all the ingredients in a large mixing bowl and toss to ensure that the olive oil and lemon pepper seasoning has evenly coated the summer squash and chicken. Next, spread the mixture onto a baking sheet. (Cover your baking sheet with aluminum foil or parchment paper to make clean up a breeze!) Bake the dish for 20 minutes, tossing with a spatula about half way through. Remove and serve while warm.
You can serve this dish as is, or over rice or pasta. Whichever way you go, you’re guaranteed a delicious meal!
Summer Squash and Chicken Sheet Pan
Ingredients
- 2 yellow squash cut into half moons
- 2 zucchini cut into half moons
- 1 cup frozen grilled chicken breast cubed
- 1/2 red onion sliced
- 1 tbsp olive oil
- 1 tbsp lemon pepper seasoning
Instructions
- Toss all ingredients together in a large mixing bowl.
- Spread ingredients evenly on a baking sheet and bake at 375 degrees for 20 minutes, tossing once midway through.

This was wonderful, so glad I came across it. My 3.5 daughter loved it also. If you substituted shrimp with it how long would it take to cook?
It’s a family favorite in our household. If you were to use shrimp, I would say 12-14 minutes for the shrimp.
