Crunchy Carrot Butternut Slaw

Crunchy Carrot Butternut Slaw is a side dish the whole family will enjoy. It’s bright colors and crunchy textures are enticing, even to kids. That’s a major parenting-win since this slaw is chock-full of nutritious veggies including carrots, butternut squash, red cabbage, green onions, and celery.

In the summer, serve this slaw alongside burgers, brats, or grilled chicken. Brighten up your winter table and serve it alongside pork chops, roasted chicken, or black bean burgers. It’s a great companion for whatever you’re serving!

Crunchy Carrot Butternut Slaw

Ingredients

  • 2 medium Carrots peeled and shredded
  • 1 small butternut squash peeled, seeded, and shredded
  • 1/2 cup celery diced
  • 1/2 cup red cabbage shredded
  • 3 tbsp meyer lemon juice
  • 1/2 cup Plain Greek yogurt
  • 2 tbsp olive oil
  • 2 tsp honey
  • 2 tbsp Green Onions chopped
  • 2 tsp fresh dill chopped

Instructions

  • Using your food processor, shred the carrots, butternut squash, and cabbage. Combine in a mixing bowl, add the diced celery.
  • In another mixing bowl, whisk together lemon juice, yogurt, olive oil, honey, green onions, and dill. Pour mixture over shredded vegetables and toss to mix.
  • Let mixture marinate for 20 minutes and serve.
