If you are a baseball mom, you know the struggle of getting dinner on the table on practice nights and game days. Itโs not unusual to spend several hours an evening or an entire Saturday at the baseball diamond. Sometimes, it just seems easier to grab a quick bite at the concession stand than to prepare a meal at home. But feeding a family at the concession stand gets costly. And even more frustrating are the limited, if any, choices that include fruits and veggies.
We understand the struggle! We are baseball moms just like you. We taxi our kids back and forth to practice, run from diamond to diamond to cheer on each child, and go home to scrub grass stains from uniforms. It was on one of those exhausting evenings that we first thought, there has to be a better way! A better way to feed our families than with concession stand junk that doesnโt take a ton of time or energy.
Thatโs how we came to develop this recipe for Celery and Apple Pasta Salad with Light Caesar Dressing. It only takes 20 minutes to prepare, itโs full of fresh produce, and itโs loved by adults and children alike! The apples, celery, and walnuts give this salad plenty of crunch. The homemade dressing is light and creamy. Make this pasta salad the night before or morning of a busy day. It packs up easily in a cooler so you can take it to the ballpark with you on those days when itโs just impossible to sit down at the dinner table.
