We used coconut milk instead of regular milk to make this recipe both vegetarian and vegan. Because it’s gluten- and dairy-free, it’s friendly to many different dietary restrictions.

Ingredients

  • 1 cup blueberries
  • 1/2 cup raspberries
  • 1/2 cup blackberries
  • 2 cups coconut milk
  • 1 tsp vanilla
  • 2 tbsp maple syrup
  • 1/2 cup chia seeds

Instructions

  • In a blender, combine chia seeds, blueberries (reserving a few for
    the top of each cup) coconut milk, maple syrup, and vanilla until
    combined.
  • Ladle mixture into 4 ramekins or small glass dishes.
  • Cover with plastic wrap and chill half hour to set up.
  • Top with fresh berries divided up between the 4 cups.
