Asparagus season is right around the corner and we can hardly wait! Did you know that asparagus season is celebrated with festivals across the country and even around the world? In the U.S., you can generally find asparagus at the grocery store year-round. But we love to up our intake of this flavorful veggie in the spring when it’s plentiful and at its most delicious.
Nutritional Benefits of Asparagus
Asparagus is a nutrient-dense vegetable low in calories and contains virtually no fat, cholesterol, or sodium. What you will find in asparagus are nice amounts of Vitamin A, Vitamin B6, Vitamin C, Vitamin E, Vitamin K, zinc, fiber, iron, copper, and manganese. It’s also an excellent source of folate, which is important for heart health and blood cell reproduction.

Asparagus With Parmesan
Ingredients
- 1 bunch asparagus
- 1 cup water
- 2 cloves garlic
- 1 Tbsp olive oil
- 3 Tbsp Parmesan cheese
- salt and pepper to taste
Instructions
- Wash asparagus and break off the stems. (To trim asparagus, gently bend each spear until it snaps).
- Place asparagus in a hot pan with water and garlic. Cover with lid and cook for 4-6 minutes.
- Remove lid and drizzle asparagus with olive oil and top with parmesan cheese. Add salt and pepper to taste. Serve hot.
