A vibrant citrus salad for a cold winter’s day!
We love salads just about any way they come, but this is one of our favorites for wintertime. It’s full of bright citrus flavors and vibrant colors which is much appreciated on a cold and gray winter’s day.
This salad is special enough to serve on Christmas day. Its crisp flavors will help bring balance to your holiday meal which is most likely composed of heavier dishes. Your family will appreciate a lighter option.
Gala apples are one of the most popular apples in the U.S. for good reason! They are crisp, juicy, and very sweet โ making them an obvious choice for this salad. They are available year-round. They can vary in color but you can identify them by their yellow-orange skin with red striping.
Let’s talk a minute about the other colorful produce items found in this salad. Dried blueberries add a bit of sweetness while red onions add a sharp aromatic kick. Walnuts and pumpkin seeds add a satisfying crunch. Orange segments bring home the Christmas-y vibes. Topped with savory goat cheese crumbles and a citrus dressing, this salad is almost too good to share! It’s a good thing we’re in the holiday spirit ๐
Spiralized Apple and Citrus Salad
Ingredients
Citrus Dressing
- 2 tbsp lemon juice and zest
- 2 tbsp orange juice and zest
- 1 tbsp honey
- 1/2 cup olive oil
- black pepper to taste
- kosher salt to taste
Salad
- 2 gala apples
- 1/2 cup red onions
- 1/4 cup dried blueberries
- 2 tbsp pumpkin seeds
- 1/4 cup walnuts
- 1 large orange peeled and segmented
- 1/4 cup goat cheese
Instructions
- Zest lemon and orange.
- Juice lemon and orange.
- Mix all dressing ingredients in bowl, set to the side.
- Spiralize the Gala apple.
- Mix in the rest of the salad ingredients. Top with orange segments and goat cheese.
