Air-Fried Watermelon Bites

The days are getting a little shorter, the mornings a little cooler, and the kids are heading back to school. Fall may be just around the bend but we want to hang onto summer just a little bit longer. We worked with our friends over at Watermelon Board to create a recipe that is reminiscent of those beloved lazy summer days… Air-Fried Watermelon Bites.

Air-Fried Watermelon Bites

Although it’s available throughout the year, watermelon is synonymous with summer. The air-fried batter coating these watermelon bites stirs memories of sunny days and warm nights spent at the fair indulging on funnel cakes and elephant ears. They are the perfect treat to help you hold onto summer for just a little bit longer.

Air-Fried Watermelon Bites are a fun after-school snack. They are quick to assemble and fry and their bite-sized shape and sweet flavors make them a winner with kids. Because they are “fried” in an air fryer, they aren’t greasy or heavy like a deep-fried snack would be. Watermelon is loaded with Vitamin C, which can help boost the immune system’s ability to defend against germs, which is especially needed as kids head back to school.

Air-Fried Watermelon Bites

Ingredients 

  • 5-7 watermelon cubes
  • 1 egg
  • 1/4 cup flour
  • 1/4 cup panko bread crumbs
  • 1 tbsp powdered sugar
  • cream cheese fruit dip optional

Instructions 

  • In a small bowl, beat the egg. In a second small bowl, add flour. In a third small bowl, add the bread crumbs.
  • Dunk each watermelon cube into the egg, then the flour, and then the bread crumbs.
  • Place cubes in air-fryer basket and cook on 400 degrees for 13-15 minutes, until golden brown.
  • Sprinkle watermelon cubes with powered sugar and serve with cream cheese fruit dip (optional).
