Pimento cheese is a southern favorite traditionally made with cheddar cheese, cream cheese, mayonnaise, pimento peppers, and seasoning. To give this beloved dip a sneaky veggie-kick, add cauliflower rice!

Sneaking in Cauliflower into Pimento Cheese

The texture of cauliflower rice blends in seamlessly with the natural texture of pimento cheese. And because it is white, it takes on the orange color of the dip and goes nearly undetected. Even the pickiest of eaters won’t mind the addition of cauliflower rice. You won’t tell and neither will we! 

You can either make your own cauliflower rice (instructions included in the recipe below) or use store-bought. Find fresh cauliflower rice in the produce department or frozen cauliflower rice in the frozen foods section of your grocery store. 

The cheese can be stored in the refrigerator for up to ten days. That means you and the kids can snack on it all week long so consider making extra! 

Serve your veggie-rific pimento cheese with crackers, fresh-cut veggies, or spread onto a sandwich. Even better, serve on Cajun-spiced Hasselback radishes!

Pimento Cheese with Hidden Cauliflower

Ingredients 

  • 1 cup Cauliflower florets *can sub fresh or frozen cauliflower rice
  • 2 cups Shredded cheddar cheese
  • 8 oz cream cheese softened
  • 1/2 cup mayonnaise
  • 1 jar (4 oz) diced pimento drained
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika

Instructions 

  • Make the cauliflower rice by grating cauliflower florets using a box grater.
  • Stir all ingredients together in a large bowl until combined.
