  • 4 boneless, skinless chicken breasts
  • 2 lbs Wada Farms baby gold potatoes quartered
  • 3 tbsp olive oil
  • 1 clove garlic
  • 1 tsp dried basil
  • 3 tbsp Ranch seasoning
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 3 tbsp grated parmesan cheese

Instructions
  1. In a bowl, toss potatoes and chicken in olive oil.
  2. Season with salt and pepper to taste.
  3. Mix together, garlic, dried basil and 1 tablespoon of Ranch seasoning. Sprinkle over the chicken and potatoes as evenly as possible.
  4. Add chicken broth to the instant pot or pressure cooker. Place the lid on in the locked position and turn the vent to the sealed position. Set to “pressure cook” for 15 minutes.
  5. Once the time is up, do a “quick release” by turning the vent to venting position. After the float valve has dropped, remove the lid and drain the pressure cooker. Move the potatoes and chicken to a larger platter.
  6. Sprinkle with remaining Ranch seasoning and parmesan cheese to garnish.
  7. Serve and enjoy!
