Are you mad for mushrooms? Then you must try this colorful salad featuring white Monterey Mushrooms®. Not only is it bursting with summer flavors, it’s a visual treat for the eyes. This salad’s rainbow colors are enticing to kids and adults alike.
White mushrooms, also known as button mushrooms, are one of the most popular mushrooms and for good reason. They have a mild, earthy flavor and a smooth, firm texture. All mushrooms are versatile, but if one type of mushroom were to win a versatility trophy it would be white mushrooms. There’s almost no wrong way to serve them!
White mushrooms are certainly perfect in this summer salad! They pair perfectly with the assortment of fresh produce in this salad, from sweet blueberries to tangy red onion slices. White mushrooms simultaneously retain their mild, earthy flavor while also taking on the flavors around them. It’s mushroom magic!
Another great feature is that this salad features the 8 oz. package of Monterey Mushrooms® Sliced White Mushrooms. They are pre-washed and ready to enjoy, making this salad even easier to make!
The other magical part of this salad is its rainbow appearance. To achieve this look, lay the salad toppings in a row on top of a bed of baby spinach, rather than tossing them together. While it would still look pretty as a tossed salad, this strategy is an easy way to dial up the presentation. It’s more enticing to little eaters and will even turn the heads of salad-avoidant kids.
To make the colorful produce shine and brighten up the flavors even more, top off this summer salad with our homemade dressing. Making your own salad dressing is quicker and easier than you might think. For this particular dressing, simply whisk together olive oil, rice vinegar, lemon juice, honey, dijon mustard, salt and pepper. Done in a snap!

Rainbow Summer Salad with White Mushrooms
Ingredients
Salad
- 9 oz baby spinach
- 8 oz Monterey Mushrooms® Sliced White Mushrooms
- 6 oz grape tomatoes halved
- 6 oz orange bell pepper chopped
- 6 oz corn kernels
- 6 oz blue cheese crumbles
- 1 avocado sliced
- 6 oz red onion sliced
- 6 oz blueberries
Salad Dressing
- 1/2 cup olive oil
- 2 tbsp rice vinegar
- 1 lemon juiced
- 4 tbsp honey
- 4 tbsp dijon mustard
- 1/2 tsp sea salt
- salt and pepper to taste
Instructions
- Lay baby spinach at the base of a bowl.
- From left to right, lay the ingredients to form a line (making a rainbow): grape tomatoes, bell pepper, corn, mushrooms, blue cheese, avocado, red onion, blueberries.
- To make the dressing: whisk together all salad dressing ingredients.Pour over the salad right before serving.
