Guacamole-Stuffed Mini Peppers

While your Guacamole is chilling in the refrigerator, prep your mini peppers and gather your toppings. Slice the peppers in half lengthwise and scoop out the seeds. Be sure to use a variety of colors!

There are no rules for toppings but here are a few suggestions that we can verify are delicious: Onions 52 onions, fresh cilantro, black beans, roasted corn, bacon crumbles, and thinly sliced jalapeno.

Ingredients 

  • mini bell peppers sliced in half lengthwise
  • 2-3 avocados mashed
  • 1 package Concord Fresh Success Classic Mild Guacamole Seasoning Mix

Toppings (optional)

  • Jalapeños sliced thinly
  • fresh cilantro chopped
  • cojita cheese crumbled
  • black beans
  • roasted corn
  • bacon crumbled

Instructions 

  • Mix the Classic Mild Guacamole Seasoning Mix into the mashed avocados.
  • Fill each mini bell pepper half with guacamole.
  • Top with your choice of toppings.
