Make something unique for dinner tonight!
This is one of those meals that is deceptively simple to execute. It’s so beautiful, unique, and full of flavor that one might assume it’s too complicated or time-consuming for a busy mom to make. Not true! From start to finish, Thai Peanut Chicken and Sweet Potato Noodles takes less than 30 minutes to make!
Stir fries are a great way to get more veggies into your family’s diet. This stir fry is particularly awesome because the noodles are made from one of our very favorite vegetables, sweet potatoes! Did you know sweet potatoes were named as one of the 10 best foods to eat regularly by The Center for Science in the Public Interest (CSPI)? That’s because they are nutritional powerhouses, loaded with carotenoids and a great source of potassium and fiber. Sweet potato noodles are a perfect solution for those following a gluten-free diet.

If you have some extra veggies in the fridge that you need to use up, don’t be afraid to throw them in too! This dish would be delicious with broccoli, bell peppers, onions, or carrots. To make this meal vegetarian-friendly, substitute the chicken for tofu or mushrooms and replace the chicken broth with vegetable broth.
