This week’s #ProduceMomPick is an Idaho® Potato!  You may have noticed how Idaho Potatoes look & taste similar to Russet Potatoes… that is because Idaho Potatoes are Russet Potatoes that are grown in the state of Idaho!  As you can imagine & as we have discussed before, there are some areas & climates that are just more ideal than others for farming certain fruits & vegetables.  The state of Idaho is one of the most perfect places in the world to grow potatoes – rich, volcanic soil, climate & irrigation.  Russet potatoes are grown in many states; however, only those that are Grown in Idaho® can be called Idaho Potatoes.  🙂

Give Au Gratin Potatoes adopted from the Idaho Potato Commission a try this week!

Instructions
  1. Preheat oven to 425 F. Lightly grease a shallow 1 1/2 quart casserole dish with butter. Fill with potato slices in layers.
  2. Sprinkle with melted butter, salt, and pepper. Top with cheese and bread crumbs.
  3. Bake 30 minutes, covered. Uncover and bake for an additional 15 minutes or until potatoes are tender.
