Baked French Toast with Cherry Topping - The Produce Moms

It’s almost time for the weekend!  And if your home is anything like my home, this means you might actually cook a homemade breakfast!  Don’t you just love Saturday & Sunday mornings 🙂

  • 1-1/2 cups milk
  • 6 egg
  • 3 tbsp sugar divided
  • 1 tbsp orange zest (optional)
  • 1/8 tsp salt
  • 8 slices French bread
  • 4 cups cherry pitted, halved
  • 1/2 cup orange juice
  • vanilla yogurt to taste

Instructions
  1. Combine milk, eggs, maple syrup, 2 T sugar, orange zest & salt; mix well. Divide mixture into two 9-inch square baking dishes (or use 1 large pan if you have something big enough). Dip both sides of each slice of bread in milk mixture; arrange bread in a single layer in the baking dishes. Cover with plastic wrap & refrigerate overnight. Marinate cherries in orange juice & remaining 1 T sugar overnight in the fridge, as well.
  2. After 8 hours of marinating, preheat oven to 400 degrees. Using a large spatula, carefully transfer bread slices to a nonstick, buttered baking sheet. Bake toast for 15-18 minutes at 400°F, turning over halfway through baking time. While French Toast is baking, heat the cherry sauce in a saucepan over medium heat, stirring occasionally. Top each slice of Baked French Toast with 1/2 cup of cherry sauce & a dollop of vanilla yogurt. Serve immediately.
