Blueberry Ice Cream Bread

The Ingredients

Yes, you only need four ingredients to make this delightful recipe. You will start with vanilla ice cream. Use the real stuff (substituting frozen yogurt or low-fat will not work)! You will want to make sure it is soft or semi-melted.

Next is self-rising flour.  You cannot substitute all-purpose flour or any other flour in place of self-rising flour.  However, if you do not have self-rising flour, you can create it with this simple formula: 1 cup all-purpose flour + 1 1/2 tsp baking powder + 1/4 tsp salt.

Blueberries may be small but they pack a big nutritional punch. They are loaded with antioxidants and phytonutrients, which give them their namesake’s blue color. Just one cup contains more than 30% of the suggested daily intake of fiber but only 80 calories. They are a good source of vitamin C, manganese, and potassium.

And add a little extra fun with sprinkles on top.  Totally optional, but we say go for it!

Blueberry Ice Cream Bread

Ingredients 

  • 1 pint North Bay blueberries washed and rinsed
  • 1 1/2 cups SELF-RISING Flour
  • 1 pint vanilla ice cream super soft, melted
  • 1/2 cup Multi-colored sprinkles for topping

Instructions 

  • Add softened ice cream to a large mixing bowl.
  • Add inSelf-Rising Flour and mix well.
  • Fold in pint of blueberries.
  • Line loaf pan with parchment + Nonstick spray.
  • Top with sprinkles.
  • Bake at 350 F for 35-40 minutes.
  • Cool, cut and enjoy!
