"Good Luck" Oven Roasted Cabbage Recipe - The Produce Mom

Cabbage.  The “Good Luck” Vegetable. Served in many households on New Year’s Day and St. Patrick’s Day. Which is lovely, but this delicious, nutritious veggie really deserves a spot at the table all year long!

Try this easy, oven roasted method and experience just how tasty Good Luck Cabbage can be… Cabbage is super affordable & full of nutrition: thiamin, calcium, iron, Dietary fiber, folate, vitamin K and more.  We enjoy this roasted cabbage recipe often in my home. You can really dress it up and spice it up anyway you want.  One of my favorite (and most indulgent) ways to enjoy oven roasted cabbage is to top it with avocado slices and crispy crumbled bacon –> Ridiculous.

Instructions
  1. Preheat oven to 400 F.
  2. Slice the cabbage into 1″ thick rounds. Don’t worry about coring the cabbage – the core will get soft in the oven & you can either eat it or discard it after the cabbage rounds roast.
  3. Spray a foil-lined baking sheet with olive oil or your nonstick spray of choice.
  4. Brush the tops of the cabbage rounds with Olive Oil. Season with Salt & Pepper.
  5. Roast at 400 degrees for approximately 35 minutes. Cabbage will be slightly browned when finished. And delicious!
