Step 1 Cook the Noodles: The first step is to bring a pot of water to a boil. Add in the rice noodles and cook until tender, about 7-10 minutes. Be sure to rinse the noodles under cold water.

Step 2 Sauté The Vegetables: In a skillet or wok, sautee the Monterey Mushrooms with olive oil for 8-10 minutes, until tender.

Step 3 Pour in the pad thai sauce packet to to the mushrooms and stir to combine. Remove from the skillet and set aside.

Step 3 Add a splash of olive oil to the same pan, and toss in the garlic and bell pepper.

Step 4 Push everything to the side of the pan. Add a little more oil and add the beaten eggs. Scramble the eggs, breaking them into small pieces with a spatula as they cook.

Step 5 Add noodles, soy sauce, vinegar, bean sprouts, and peanuts to the pan. Toss everything to combine.

Step 6 To assemble, serve each plate with a heap of the noodle mixture, top with saucy mushrooms, and garnish with green onions, cilantro, and lime wedges.
