Ingredients Needed for Caramelized Pears & Blue Cheese Tarts
Preheat the oven to 350°. Line a baking sheet with parchment paper. Slice the pears, and set aside. Note: Watch the video in the recipe post (click below) on how to slice a pear without a lot of waste!

In a saucepan, melt the butter. Once the butter has melted, add in the pears and brown sugar. Stirring to coat the pears with the mixture. Allow to cook for about 5 minutes or until the pears have softened and the pear juice has mixed in with the syrupy liquid.

Place the puff pastry on a baking sheet. Cut it into 4 equal pieces. Score a “border” on the outside of the puff pastry, ensuring not to cut all the way to the bottom. This will allow the puff pastry to “puff up” on the edges. It’s okay if it’s not perfect!

Brush the border of the puff pastry with egg wash. This will help to prevent it from burning. You’ll want to go lightly so that the pastry puffs up.

Place the pear mixture into the center of each piece of the tart, keeping within the border. You’ll want to use a spoon and drizzle the syrup over the puff pastry.

Bake for 20-25 minutes until golden brown. Remove from the oven. Allow to cool for about 5 minutes and add the walnuts and blue cheese. If you have any remaining syrup leftover, you can top the tart with it!
