Apple and Pear Puff Pancake

This Apple and Pear Puff Pancake is a fantastic and fun breakfast recipe! It’s absolutely delicious and everyone will be asking for seconds. And the bonus is that it looks almost too pretty to eat!

Ingredients

Preheat the oven to 425°. Place butter in a 10-in. cast iron skillet. Heat in the oven until the butter is melted, approximately 2 minutes. Tilt the pan to coat evenly with butter.

Place eggs, milk, flour, sugar and nutmeg into a blender. Cover and process until smooth. Pour into the hot cast iron skillet. Bake until puffed and starting to brown (approximately 15-17 minutes).

For the topping, heat the butter in a large skillet over medium heat. Add Crunch Pak® apple and pear slices, sprinkle with sugar and cinnamon. Cook until the fruit is tender, stirring occasionally (approximately 13-15 minutes).

Remove the pancake from oven; fill with fruit mixture and serve immediately. Serve with maple syrup and whip cream, if desired.
