Apple pie cupcakes have all the classic seasonal flavor fo a fresh, homemade gooey apple pie filling topped on a cake-like cupcake with creamy buttercream frosting. All the nostalgia with less prep work than a traditional apple pie.

3/4cupunsalted butterat room temperature
4ozcream cheeseroom temperature
1/3cupstore bought caramel sauce
3cupspowdered sugar
1teaspoonpure vanilla extract
1.2teaspoonground cinnamon
1teaspoonsea salt
Instructions
Apple Pie Filling
Melt the butter in a large saucepan.
Next, add in your apple pie spice and stir until combined.
Once the butter and apple pie spice are combined, add in the apples.
Next, add in the sugar and water. This will create the base for your sauce.
In a small bowl, combine the cornstarch with two tablespoons of water. Stir to combine, and add into the apples, stirring to incorporate into the sauce. Cook for one minute, until thick.
Cupcakes
Preheat the oven to 350℉.
Spray your muffin tray or place liners in the muffin tin.
Prepare the cake mix according to the package directions. Add in one tablespoon of apple pie spice. Mix until the batter is smooth.
Fill the cupcake liners about 2/3 of the way full with the batter.
Add a spoonful of filling in the center of each muffin cup.
Bake for about 15-18 minutes or until a toothpick comes out clean.
Transfer to a cooling rack and cool completely.
Buttercream Frosting
Beat the butter and cream cheese with a hand mixer in a large bowl for one to two minutes, until light and fluffy.
Beat in the caramel sauce until smooth. Gradually beat in the powdered sugar until smooth. Beat in the vanilla, cinnamon, and salt.
Transfer the frosting to a piping bag fitted with your desired tip. Frost around the rim of each cupcake, leaving a small well in the center.
Top with a Crunch Pak® apple slice or leftover filling.
