Ingredients
6Monterey Mushrooms Portabellas*
1ozTaco seasoning
2Tbspolive oil
Salt and pepper to taste
6taco shellshard or soft
1/2cupcherry tomatoeshalved
Avocado chunks
Cotija cheese
Cilantro
Instructions
Preheat the oven to 400 degrees F.
Clean the portabellas with a damp paper towel.
On a lined baking sheet, lay the Portabella caps. Drizzle with olive oil and season with salt and pepper to taste.
Roast for 20 minutes.
Transfer the portabellas to a bowl. Pull them apart with two forks to get that authentic 'pulled'-look. Add in the taco seasoning.
Assemble your tacos.
