4-6sweet potatoesI used 6 for this recipe to fill a 12″ cast iron skillet
3tbspunsalted buttermelted
2garlic clovesminced

Instructions
Start by preheating your oven to 350°.
Next, using a mandolin slice the sweet potatoes. We started by slicing 4 sweet potatoes and ended up slicing two more to fill the 12″ cast iron skillet. Depending on the size of the sweet potatoes and skillet, you may need more or less.
Once the sweet potatoes have been sliced, set them aside and make the dressing. Place melted butter, olive oil, rosemary, salt and pepper in a bowl and whisk until incorporated.
Place the slices of sweet potatoes into a ring in your oven safe skillet or dish. Should you have leftover sweet potato slices you can create a smaller ring to fill the skillet.
Pour the dressing over the sweet potatoes and bake covered for 30 minutes until the sweet potatoes are tender.
Uncover the sweet potatoes and brush with a tablespoon or two of more olive oil. Bake uncovered for an additional 15-20 minutes.
Serve the sweet potatoes with additional sea salt and fresh rosemary.
