Sweet Potato Hash

Ingredients

tbsp
coconut oil

Sweet Potatoes
peeled & diced
1
red onion
diced
2
bell peppers
diced
Salt and pepper to taste
Cayenne pepper
optional

Instructions
In a large skillet, melt coconut oil.
Once melted place sweet potatoes, red onion and bell peppers. Cook until sweet potatoes are tender. I tend to “burn” mine a little for added flavor!
Add in salt, pepper and a pinch of cayenne pepper if using, be sure to stir thoroughly.
Using a spoon or spatula, dwell out two holes for the eggs to go.
Add eggs to hole, I put my skillet on low during this process.
Cook eggs for your liking, I love an over easy egg.
Serve and enjoy a hearty and filling breakfast.
