Peel and cut 2 medium yams into 1 inch squares. Drizzle yams with 1 teaspoon olive oil.
Combine 1 tablespoon sugar and cinnamon stir in potatoes until evenly coated.
Spray flat, shallow baking pan with cooking oil. Place potatoes on pan, sprinkle with 2 teaspoons sugar and bake for 40 minutes turning potatoes twice.
