Honeycrisp Waldorf Salad

Ingredients

apple
Honeycrisp, cored & diced (about 10 large apples)

pineapple juice

rice
brown or white, cooked & chilled

celery
chopped

cups
walnuts

raisins

carrot
shredded or chopped

cups
yogurt
plain or vanilla
1 1/2
cups
mayonnaise
light

tbsp
salt

tsp
cinnamon
1/2
tsp
corriander
ground (this is optional)

heads
lettuce
butter or leaf
Instructions
Toss apples with pineapple juice, drain if necessary.
Stir in rice, celery, walnuts, raisins & carrots.
In a separate bowl, blend together yogurt, mayo, salt & spice.
Stir dressing into apple mixture. Cover & refrigerate until ready to serve.
Serve over a bed of lettuce.
