Ancient Grain Salad with Blueberries

Salad

cups
quinoa, farro, or hard wheatberries
cooked

Green Onions
whites and greens chopped

blueberries

cup
red grapes
halved

green apple
chopped

cup
celery
diced
1/4
cup
bacon
crisply cooked and crumbled

walnuts
toasted and coarsely chopped

gorgonzola cheese
crumbled

baby spinach
Instructions
Add salad ingredients into a large bowl except walnuts, cheese, and spinach. Toss to combine.
For dressing, combine ingredients in a jar with a tight-fitting lid and shake well to combine.
Pour dressing over salad and mix well. Top with walnuts and cheese. Serve over spinach.
