Ingredients
4boneless pork chops
2largeWada Farms' Sweet Potatoescubed
2largeHoneycrisp apples
1cupwalnutshalved
1/3cupextra virgin olive oil
3tbspbalsamic vinegar
1 1/2tspdijon mustard
2tspbrown sugar
1tspsea salt
salt and pepperto taste
Instructions
Preheat oven to 375 degrees Fahrenheit, and line sheet pan with parchment paper.
Cut and cube Wada Farms’ Sweet Potatoes, lay on sheet pan.
Cut and slice apples, and lay next to the sweet potatoes on the sheet pan.
Lay pork chops on sheet pan.
In a bowl, make the sauce by whisking together Extra Virgin Olive Oil, Balsamic Vinegar, Dijon Mustard, Brown Sugar and Sea Salt.
Pour sauce over pork chops, sweet potatoes & apples on the sheet pan.
Bake for 15 minutes. Remove from oven and flip pork chops, sweet potatoes and apples.
Add walnuts to the sheet pan, and bake for 15 more minutes or until the pork is no longer pink.
Plate pork chops, sweet potatoes, apples and walnuts, and enjoy!
